Combine post holiday withdrawals and cool weather with a late home coming and voila! A quick and simple creamy pumpkin soup.
๐ Combined a can of pumpkin purée, coconut milk and chicken stock and laddle full of maple syrup in a pot ๐ While waiting for that to come to a simmer, in a separate pan, browned some bacon, drained off the fat and tossed in a handful of spinach and tossed until wilted.
Served pumpkin blend in a bowl, topped with crunchy bacon spinach and finished with what else but plain Cheerios because that's just my life right now.
