Quick Quinoa with Beans
Tonight's quick dinner with simple ingredients that came together really quickly for my two little hungry tummies.
(Serves family of four with two under five with a little leftover for mama's lunch 😉)
Prepare 1 cup of dry quinoa with 2 cups chicken stock (15 mins)
Once cooked lower heat and add
- 1 can dried black beans
- Season with onion powder, garlic powder, cumin, oregano, paprika, salt and pepper OR sprinkle with taco seasing
Turn off heat and add fresh ingredients
- Handful of halved grape tomatoes
- 1 whole avocado
- 1 tsp lime juice
Serve with/without grilled chicken. Pau (Done).
Note to self:
- Weekend prep 4 cups of quinoa for quick ready-to-use access to use in any meal.
- Grill chicken in larger batches for multiple meals used in different ways
