There's nothing easier (or faster) than a basic tomato sauce: the key is having a can in the pantry and some fresh basil and Parmesan in the fridge. Using eggplant today but can be substituted with mushrooms, zucchini or just plain old garlic.
💧 Get pasta water ready
🍆 Sautéed cubed eggplant with onions; once cooked to desired tenderness add tomato sauce and handful of grated Parmesan cheese (chili flakes optional); let simmer; add fresh basil and season to taste.

Add cooked pasta and finish with fresh cracked pepper and shower with more Parm #done #simple #fast #easy and the boys eat this all up too #victory
